To use this feature, immerse the probe in 2-1/2 inches of boiling water. If the pointer registers at Boil Test, you're fine. If you are significantly above sea level and the pointer is lower, subtract that number of degrees from the target temperature of the meat you're cooking. If you are below sea level and the pointer is higher, simply add that number of degrees.
